Rinse off the horrid stringy flesh bits, boil for 5 min in salted water, dry fully then coat with olive oil and a pestled mix of spices. I used salt, pepper, chilli flakes and paprika. Roast on a tray for 10-15m at 180C.

Just had this amazing delicious wonderful mess for breakfast.

Onions, peppers, chilli, tomatoes, garlic, spicy sausage, chorizo, ham, egg, cheese, hot sauce, paprika and a squeeze of lime juice. All in one pan. Cook until delicious.

Yes, my yoke broke putting the egg in.

I could have eaten it straight out the pan, honestly. It was so good.

half a kilo of cow rump, please excuse the pink BBQ plate, it was the only one I had big enough to hold the pile of food. Few minutes on the griddle pan then oven for a few minutes more, rubbed with sea salt and crushed peppercorns.
