Talking of aging.
I bought a big slab of Scotch fillet a couple of weeks ago, as the one before had been so good.
Same butcher , same brand, same packaging, etc.

Day after I bought it cut some steaks, cooked as usual and ....... awful, they literally boiled and tasted shite.
So I wrapped the rest in a tea towel (no muslin cloth) and left it on the bench for 2 days, I changed the towel and put it in the fridge (turning each day) for a week and then cut a couple of steaks off. Now we're talking, really nice flavour and texture.
There looks to be about 2.5kg left and its a beautiful purple/brown (green) colour, roasting the whole thing on my (overpriced piece of shit) Weber.

I made garlic bread (fcuk off with the Kay jokes, alright?) to go with the pasta last night. It was well good, but would appreciate suggestions.

Basically grate a load of garlic, soften it for about 5 minutes over a low heat in melted butter, tiny pinch of salt, add some freshly chopped mint (trust me, it's ace) slather all over freshly baked warm crusty rolls. Push into face alongside pasta bolognese and a nice red.

I'd ask ID, but, well. You know.

1) I had to google Doxxing
2) I quite like a good corned beef pie/hash, done right they're delicious

Dibs, if you know who he is, can't you reach out?

Also, Dibs/Moles, if the menu post is what's upset ID, probably worth deleting if it can be traced to him IRL?

Good idea. Bit of humble pie (not corned beef, obv!) from Dibs might be all that's required. And delete the post.

Ok I had a long think and DIB actually phoned me which must have taken a big pair of balls and so I'm back.

I also saw some of the posts and was quite touched by some of the comments and sad when it appeared the place was going to rip itself apart.

I left because of the corned beef pie post. I sell it because the local scum won't pay for "Lamb Porchetta". I never professed to be a master chef. I can cook and I know what good Italian food is. Everyone on here has their "thing" which they are precious about- mine is my country's cuisine, KM his sounds, Rod his rapering etc. I enjoy the wind-up's and I feel I should take it as well as I give it but DIB's dooxing threat went a little over the line- all forgiven now though. My piss taking of the lamb porchetta was never meant to offend the people who went for lunch there- which I hoped was conveyed when I threatened to walk into the kitchen waving a lamb, but there you go. I actually DID email the restaurant and that was a genuine reply.

It's time to draw a line under this and move on.

I have to mention the first minute or so of the call, where I was trying to avoid saying "I'm that bloke from the internet that took the piss out of you corned beef pie" and ID was trying to avoid saying "I know exactly who you are and what you're talking about" when there was someone in the room with him, before him saying "Oh yeah, I'll transfer the call to my office".

Glad it's all sorted, but no it didn't take big balls, it was just the right thing to do.
