DIY Pickled Onions

Does anyone here ever pickle onions?

I had a go at it at the weekend. I suppose I should have checked in here first for first-hand experiences. but it seemed pretty straightforward.

1. Buy a load of wee onions. Peel them, layer them in a bowl with sprinkled salt. Cover and leave overnight.

2. Buy of load of vinegar. I bought ordinary white vinegar. Stir in some sugar. The recipe called for herbs and shit and to boil it all up together and let it cool, but I didn't have any of those so I ignored.

3. Next day, wash the salt off the wee onions, dry them and bung them into jars. Cover with vinegar and put on the lid.

4. Come back in 6 weeks, they'll be pickled by then.

I've made my own by simply reusing the onion juice from other POs and leaving my onions in there for about a year, never even boiled them....they were amazing, I think the boiling job is just for the skins, but I manualised that job

I skipped over that bit in my first post - to skin them i poured boiling water on them, left them for 20 seconds, drained and poured cold water on them. they peeled easily after that.

I don't think you actually boil the onions and vinegar together, do you?

I too adore pickled onions (and other pickled vegetables, although pickled eggs can get tae fcuk). Might make some.

I think I read it that you boiled them in the vinegar, which i'd never heard of...apologies lol!
